Spiced Blackened Okra goes well with warm flour tortillas!
Ingredients
- 2 cups Okra, cut into ¼ inch rounds
- ½ cup red onions, sliced
- 1 tsp curry powder
- ½ tsp cumin
- 1 tbsp apple cider vinegar
- 1/8 tsp salt
- ½ cup water
Directions
- Add oil and cumin seeds to a pan and heat for 30 seconds.
- Add onions and saute for about a minute till it softens.
- Add the rest of the ingredients and saute till the water evaporates and okra softens.
- Place the okra and onion mixture on a baking sheet and broil on high for about 15 minutes.
