This vegetarian burrito bowl is great for summer eaten al fresco or any where!
Ingredients
- 1 cup white rice, cooked
- ¼ cup lettuce, shredded
- 1 avacados, sliced
- 1 can black beans, washed and drained
- ¼ cup sweet corn, forzen, thawed, drained and microwaved
- 1 plum tomato, chopped
- ½ cup light sour cream
- 1 tsp hot sauce
- 1 tsp lime juice
- ¼ cup cilantro, chopped
Directions
- For the cilantro rice, mix the cooked white rice, lime juice and cilantro.
- Place the rice in a bowl and add the lettuce, avacado slices, black beans, corn and tomatoes.
- Mix the sour cream with the hot sauce and add on top. Add salsa, cheese and other toppings as desired.
