Tofu Manchurian in 3 Easy Steps

Ingredients

  • 1 package extra firm tofu
  • 1/3 cup red peppers, diced
  • 1/3 cup green onions, sliced
  • 3 Tbsps. tomato sauce
  • 3 Tbsps. soy sauce
  • 2 Tbsps. corn starch
  • 2 Tbsps. oil
  • ½ cup water

Directions

  1. Drain the tofu and slice into cubes. Place on a sheet pan, brush with oil and broil for 10 minutes till it browns.
  2. Add some oil to to a pan and sauté the red peppers for about a minute. Add the green onions, tomato sauce, soy sauce and cornstarch mixed with water. Heat till the sauce thickens.
  3. Add the tofu to the sauce and mix well. Serve with rice or noodles.

Cauliflower Steaks

Ingredients

  • 1 cauliflower, sliced
  • 1 tsp curry powder
  • ¼ tsp turmeric powder
  • ½ black pepper
  • 1/8 tsp salt
  • 2 Tbsps olive oil

Directions

  1. Cut the cauliflower into 3/4 inch slices.
  2. Mix the sat, pepper, turmeric and curry powder to make a spice mix.
  3. Place the cauliflower slices on a sheet pan and drizzle with olive oil. Rub the spice mix over the cauliflower. Turn and repeat on the other side.
  4. Cook in a 450F oven for 20 minutes turning over after 10 minutes. Place under a broiler to brown for a few minutes if necessary.

Zucchini Boats

You got low-carb vegetarian deliciousness in this version of Zucchini Boats!

Ingredients

  • 1 Zucchini, sliced in half
  • 1 8oz can kidney/black beans, washed, drained, mushed
  • 1 8oz. or 12oz. bag corn, frozen
  • ½ cup mozzarella, shredded
  • 1 tsp cumin seeds
  • 1 tsp cumin powder
  • ½ tsp black pepper
  • 1 tsp olive oil

Directions

  1. Scoop out the seeds from the middle of the zucchini to form boats. Rub the zucchinis with oil and place skin side up on a baking sheet. Bake at 350F for 20 minutes.
  2. For the filling: Warm a little oil with some cumin seeds for about 30 seconds and add the frozen corn. Sauté for about a minute. Then add cumin powder, black pepper and beans. Mix well, take off heat and set aside.
  3. Rub a little salt over the zucchini boats. Scoop the filling in the hollowed out center. Sprinkle mozzarella on top and broil for about 3 minutes to brown.

Cabbage Patties

Ingredients

  • 1/2 small cabbage, diced
  • 1 large potato, peeled and boiled
  • ¼ cup onions, diced
  • 2 Tbsps chick pea flour
  • 1 egg
  • 1 tsp cumin powder
  • 1 tsp cumin seeds
  • 1/8 tsp salt
  • 2 tsps. canola oil

Directions

  1. Warm the oil in a skillet and add the cumin seeds for about 30 seconds till it is aromatic.
  2. Add the onions and sauté for about a minute till it is soft. Add the cabbage and continue to sauté for 3-5 minutes till the cabbage is soft. Add a little water, cover and cook till the water evaporates and the cabbage softens. Sprinkle with salt. Remove from heat and set aside to cool
  3. Add potatoes to a mixing bowl and mash them. Add the cabbage- onion mixture, cumin powder, chick pea flour, egg and mix well.
  4. Form into patties and bake on a sheet pan at 350F for 20 minutes. Broil for a additional 3-5 minutes to brown.

Vegetable Strudel

This cheesy Vegetable Strudel that is a great addition to your Fall table!

Ingredients

  • 1 sheet puff pastry, frozen thawed
  • 1 cup mushrooms, sliced
  • 1 cup green peppers, sliced
  • 1 cup yellow peppers, sliced
  • 5 black olives, sliced
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • 1 cup mozzarella, shredded
  • 1 Tbsp olive oil
  • 1 Tbsp soy milk

Directions

  1. Broil the mushrooms and peppers in the oven for 15 minutes. Sprinkle with Italian seasoning and let it cool.
  2. Place the thawed pastry sheet on a floured surface and roll out.
  3. Place a layer of peppers in the middle third of the pastry sheet and sprinkle with mozzarella. Add a layer of mushrooms, followed by mozzarella and sprinkle some olives on top.
  4. Cut ½ inch slits on either side of the pastry sheet. Take a pastry strip form either side and press them together in the middle, covering the vegetable layer and creating vents for the steam.
  5. Mix the oil and soy milk and brush it over the pastry. Bake at 400F for 15 minutes till it is golden brown.

Butternut Squash with Herbs and Roasted Garlic is a great gluten-free, dairy-free side for your Thanksgiving table!

Ingredients

  • 1 butternut squash, peeled and cubed
  • 3 cloves garlic
  • 1 Tbsp rosemary (fresh/dry)
  • 1 Tbsp thyme (fresh/dry)
  • 3 Tbsps parsley, fresh
  • 1 tsp back pepper
  • 1/8 tsp salt
  • 1 tsp olive oil

Directions

  1. Place the diced butternut squash on a baking sheet and sprinkle with olive oil, rosemary, thyme, pepper and salt.
  2. Place the garlic cloves with their skins on the baking sheet as well.
  3. Bake at 350F for 20 minutes.
  4. Squeeze the roasted garlic onto the butternut squash and mix well.
  5. Return to the oven and broil for 5 minutes. Remove and sprinkle with parsley.

Ingredients

  • 2 potatoes, boiled, mashed
  • 2 cups flour

Directions

  1. Add four 1/2 cup at a time to the mashed potatoes and knead. Stop adding flour when the dough forms a ball.
  2. On a floured surface, roll out small portions of the dough into long shapes. Cut into bit-size pieces of gnocchi.
  3. Boil a pot of water with salt and add the gnocchi to the boiling water for 3-5 minutes till they rise to the top.
  4. Remove, drain and serve hot with tomato sauce and basil or with butter and sage.

Avocado Salsa

Ingredients

  • 1 large avocado
  • ½ cup frozen corn, thawed
  • 1 orange
  • ¼ jalapeno, seeded, diced
  • 1 tsp lime juice
  • ½ cup cilantro, chopped

Directions

  1. Peel the orange and cut along the membranes to remove the segments. Slice the segments.
  2. Slice the avocado in half, scoop out the insides and chop.
  3. Mix the oranges, avocado, jalapeno, corn and lime juice.
  4. Sprinkle with cilantro and serve on top of grilled tofu and grilled tortillas for an amazing taste!

  • 1 15 oz can pumpkin
  • ¼ cup sugar
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 2 eggs
  • 1 graham cracker crust shell

Directions

  1. Add cinnamon, nutmeg and ginger, and eggs to the pumpkin puree and mix well.
  2. Pour into a graham cracker crust shell and bake at 425 F for 15 minutes. Cool for an hour before slicing.
