General Tso’s Tofu

This popular American classic takes on a vegan flavor with General Tso’s Tofu! So simple and yummy this one is sure to please everyone in the family.

Ingredients

  • 1 package of firm tofu, cubed
  • 1/2 cup corn starch
  • For the Marinade:
    • 3 Tbsps. soy sauce
    • 3 Tbsps. apple cider vinegar
  • For the Sauce:
    • 3 Tbsps. soy sauce
    • 3 Tbsps. apple cider vinegar
    • 3 Tbsps. maple syrup
    • 1 Tbsp corn starch
    • 1/2 cup water
    • 1 clove garlic, minced

Directions

  1. Drain the tofu, pat dry, cut in cubes and marinade with soy sauce and apple cider vinegar for at least 3 hours.
  2. For the sauce: mix the soy sauce, apple cider vinegar, maple syrup, corn starch and water.
  3. Add some oil and garlic to a pan, warm for a few seconds and add the sauce. Warm till it thickens
  4. Add the tofu and toss to coat. Serve with warm white rice.

Quinoa -Crusted Tofu Nuggets

Try these Quinoa-Crusted Tofu Nuggets with some barbecue sauce for a protein-packed, healthy snack!

Ingredients

  • 1 extra-firm tofu
  • 1 cup quinoa, cooked
  • 1 cup southern barbecue sauce
  • ¼ cup corn starch

Directions

  1. Drain the tofu and cut into rectangles.
  2. Dip the tofu in corn starch, barbecue sauce and quinoa.
  3. Place on a sheet pan, drizzle with olive oil and broil for 10 minutes on one side and 5-7 minutes on the other. Serve with more barbecue sauce or ranch dressing for dipping.

Vegan Tofu Souvlaki

This version of Vegan Tofu Souvlaki is broiled in the oven is so easy to make, you can make it for a quick weeknight meal!

Ingredients

  • 1 block tofu, drained, dried and cubed
  • Marinade:
    • 2 Tbsps Oilve oil
    • 1 lemon, juiced
    • ½ tsp salt
    • ½ tsp black pepper
    • 2 cloves garlic, minced
    • ½ tsp paprika
  • ½ tsp oregano
  • 3 Tbps. nutritional yeast

Directions

  1. Drain the tofu and pat it dry. Cut into cubes.
  2. Mix the olive oil, lemon juice, salt, pepper, garlic and paprika to make the marinade.
  3. Marinade the tofu cubes for an hour.
  4. Sprinkle with nutritional yeast and skewer them.
  5. Broil for 15 minutes on one side and 5 minutes on the other.
  6. Sprinkle with oregano and serve with pita/rice and tzatziki.

Tofu Tacos with Salsa Verde

It’s all about simple and delicious! You can make Tofu Tocos with Salsa Verde for a quick weeknight meal.

Ingredients

  • 1 block, tofu
  • 1 cup shredded lettuce
  • 1 roma tomato, seeded, diced
  • Few cilantro leaves (optional)
  • 2 flour totillas
  • 1 avacado, sliced
  • 1 tsps. salsa verde
  • 1 pinch Salt and black pepper
  • 1/8 tsp Cajun seasoning
  • 1 tsp olive oil

Directions

  1. Drain and pat the tofu dry. Slice, sprinkle with salt and black pepper. Drizzle with olive oil and broil for 15 minutes to brown.
  2. To assemble:
    • Fire roast or toast your tortillas in a toaster.
    • Dice the tofu slices and place it on the tortillas. Sprinkle with Cajun seasoning.
    • Spoon salsa verde over the tofu.
    • Top with some shredded lettuce, diced tomatoes and cilantro (optional).
    • Serve with sliced avocados on the side.

Palak Paneer with Tofu

Palak Paneer with Tofu is a healthier option and tastes simply divine!

Ingredients

  • 1 bag fresh spinach, washed, dried and chopped
  • 1 box extra firm tofu, cubed
  • 1 tsp root ginger, grated
  • 1 clove garlic, grated
  • ¼ cup onions, diced
  • 2 Tbsps sour cream
  • ½ tsp curry powder
  • 1/8 tsp salt

Directions

  1. Sauté the onion is a little oil until it is soft, for about a minute. Add the ginger, garlic, spinach, salt, black pepper, curry powder and continue sautéing until the spinach wilts.
  2. Blend the spinach mixture in/with a blender until smooth.
  3. Place the tofu on a baking sheet. Sprinkle with salt, drizzle with oil and broil for 10 minutes till it browns slightly.
  4. Add the tofu to the spinach mixture and mix well. Heat through and serve hot with naan bread.

Red Lentil Tofu

Red Lentil Tofu can be used like regular tofu, grilled, broiled, baked or as is. Flavor it with your favorite herbs, spices or sauces.

Ingredients

  • 1 cup red lentils
  • 3 cups water

Directions

  1. Add the red lentils to a blender.
  2. Boil 2 cups of water and add it to the lentils and let it cool for 15 minutes. Blend into a smooth paste.
  3. Pour it into a saucepan and heat with a cup of water, stirring constantly for 3-5 minutes till it is very thick.
  4. Transfer it to a baking dish, smooth and refrigerate uncovered for an hour. Cover and refrigerate overnight to get an extra firm texture.
  5. Slice and use like regular tofu.

  • 1/3 cup red peppers, diced
  • 1/3 cup green onions, sliced
  • 3 Tbsps. tomato sauce
  • 3 Tbsps. soy sauce
  • 2 Tbsps. corn starch
  • 2 Tbsps. oil
  • ½ cup water

Directions

  1. Drain the tofu and slice into cubes. Place on a sheet pan, brush with oil and broil for 10 minutes till it browns.
  2. Add some oil to to a pan and sauté the red peppers for about a minute. Add the green onions, tomato sauce, soy sauce and cornstarch mixed with water. Heat till the sauce thickens.
  3. Add the tofu to the sauce and mix well. Serve with rice or noodles.
