Smash Avocado and Chickpea Salad (Sandwich)

Nothing is more versatile and healthier than a Smash Avocado Chickpea Salad (Sandwich)! You can also use it as a dip.

Ingredients

  • 1 can chick peas, drained and rinsed
  • 2 avocados
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 Tbsp. lemon juice


Directions

  1. Cut the avocados, scoop out the insides and cut into small cubes. Add the chick peas and smash with a fork.
  2. Add the Italian seasoning, salt, pepper and lemon juice and mix well.
  3. Place between crusty bread to make a sandwich( with toppings of your choice like tomatoes, lettuce). You can eat it as a salad without the bread or use it as a dip.

Spinach and Feta Grilled Cheese

Treat yourself to this Spinach and Feta Grilled Cheese. It’s so cheesy and delicious!

Ingredients

  • 1 cup baby spinach leaves, washed and dried
  • 4 slices sour dough bread
  • 12 grape tomatoes, broiled (optional)
  • 1 cup mozzarella cheese, shredded
  • ½ block feta, slices
  • 1/8 tsp oregano
  • ¼ tsp black pepper
  • 1 Tbsp butter

Directions

  1. Assemble the sandwich by placing a layer of mozzarella on a slice of sour dough bread. Top with a layer of spinach, followed by feta slices and some mozzarella on top. Sprinkle with oregano and black pepper.
  2. Butter a slice of bread and toast it on one side in a pan. Remove the bread and place the warm, toasted side on top of the assembled components and press down.
  3. Butter the top, lift the sandwich carefully and place buttered side down on the warm pan. Toast for about 3-5 minutes pressing down until it borwns. Flip carefully and toast on the other side as well for about 3 minutes. Slice in half and enjoy with a salad!

Spinach and Artichoke Grilled Cheese

Cut up some crusty bread and make this delicious Spinach and Artichoke Grilled Cheese!

Ingredients

  • ½ cup spinach, finely chopped
  • ¼ cup artichokes, finely chopped
  • 2 Tbsps mayonnaise
  • ½ cup mozzarella cheese, grated
  • 2 Tbsps parmesan cheese, grated
  • 1/8 tsp black pepper, freshly ground
  • 4 slices, crusty bread

Directions

  1. Mix the spinach, artichokes, mayonnaise, half of the mozzarella cheese, parmesan, and black pepper to make the filling.
  2. Brush a pan with butter or olive oil to a pan and toast the bread slices on one side.
  3. Place the filling on the toasted side of two slices. Sprinkle with remaining mozzarella and top the other slices placing the toasted side on top of the cheese layer. Press down.
  4. Brush the pan again with butter/olive oil and toast the sandwich on both sides. Slice and serve hot.

Simple Egg Salad Sandwich

This Simple Egg Salad Sandwich is bursting with flavors!

Ingredients

  • 2 eggs
  • 1/3 cup celery, diced
  • 1/3 cup green onions, diced
  • 2 Tbsps mayonnaise
  • 1 tsp hot sauce (optional)
  • 1 tsp Dijon mustard
  • 1/8 tsp black pepper

Directions

  1. Place eggs in a pan of water and heat till the water comes to a boil. Let it boil for 10 minutes. Remove from water and let it cool.
  2. Peel the eggs and dice them roughly. Add celery, grren onions, mayonnaise, mustard, hot sauce (optional) and balck pepper and mix well. Place between two slices of sour dough bread to make a sandwich.

Bahn Mi

Bahn Mi is a Vietnamese sandwich on a baguette that is a great for summer picnics.

Ingredients

  • 1/3 cup baby carrots, julienned
  • 1/3 cup cucumber, julienned
  • 1 package tofu, sliced and grilled
  • 1/3 cup cilantro
  • 1 baguette, sliced and toasted
  • 1 Tbsp mayonnaise
  • 1 tsp hot sauce
  • 1/3 cup white vinegar
  • 1/4 cup water
  • 2 Tbsps salt

Directions

  1. Heat the vinegar, water and salt for about a minute till the salt dissolves to make pickle juice. Cool.
  2. Place the carrots and cucumber in a mason jar and pour the pickle juice over them. Let is sit for about 1/2 hour.
  3. Slice the baguette in half and toast it. Cut into 6 inch pieces.
  4. Mix the mayonnaise and hot sauce. Spread this on the toasted baguette slices.
  5. Place the grilled tofu on a slice of baguette. Add some pickled carrots, cucumber and cilantro. Top with another baguette slice.

Tea sandwiches in six different ways to get your salty-sweet fix!

Ingredients

  • 6 slices multigrain bread
  • 1 box onion and chives cream cheese
  • 1 box strawberry cream cheese
  • 1 radish, sliced thin
  • ¼ cucumber, sliced thin
  • 1 plum tomato, sliced thin
  • 2 strawberries, sliced thin
  • ¼ cup blueberries
  • 1 egg, hard boiled, diced
  • 1 tsp mayonnaise

Directions

Spread three slices of bread with the onion and chives cream cheese, two slices with the strawberry cream cheese and one with mayonnaise. Trim the crusts and cut each slice in two, lenghtwise.

  1. Radish sandwich : Place the radish between two slices with the onion and chives cream cheese.
  2. Cucumber sandwich : Place the cucumber between two slices with the onion and chives cream cheese.
  3. Tomato sandwich : Place the tomatoes between two slices with the onion and chives cream cheese.
  4. Egg salad sandwich: Mix with egg with a teaspoon of mayonnaise and sprinkle with some salt and pepper. Place this between the two slices with the mayonnaise.
  5. Strawberry sandwich : Place the strawberries between two slices with the strawberry cream cheese.
  6. Blueberry sandwich : Place the blueberries between two slices with the strawberry cream cheese.
