Vegan Avocado Mayo is a healthy option to traditional mayonnaise.
Ingredients
- 1 avocado
- 1 clove garlic, minced
- 2 tsps. apple cider vinegar
- 2 tsps. olive oil
- 1 tsp Dijon/yellow mustard
Directions
- Cut the avocado in half and scoop out the flesh into a blender.
- Add the garlic, olive oil, mustard, apple cider vinegar and blend.
- Refrigerate in a tightly sealed container and use within 2-3 days.
