Frozen Yogurt Treats

These Frozen Yogurt Treats are just right for a balmy Summer day!

Ingredients

1 cup full fat plain Greek yogurt

1/8 cup honey

1/3 cup strawberries, sliced

1/3 cup blueberries

Directions

  1. Mix the honey and yougurt.
  2. Line a 9.5 X % inch baking pan with parchment sheet and spread the yogurt on it.
  3. Top with the strawberries and blueberries and freeze for 3-4 hours. Cut into squares and enjoy!

Vegan Chocolate Truffles

Treat yourself to some decadent Vegan Chocolate Truffles! So easy to make with just three ingredients.

Ingredients

  • 1 cup dark vegan chocolate chips/chocolate bar(finely chopped)
  • 1/2 cup soy milk
  • 1/2 cup unsweetened cocoa powder

Directions

  1. Place the chocolate chips/finely chopped chocolate bar in a bowl.
  2. Heat the milk till it simmers and pour over the chocolate chips. Let it sit for 1-2 minutes. Stir till the ganache is smooth and cover and chill for 3-4 hours.
  3. Scoop the chocolate and roll into balls. (it may be a bit sticky.) Roll in cocoa powder and place the truffles on a parchment lined baking sheet. Freeze for about 4 hours. Store the chocolate truffles in the freezer in an air-tight container for up to a week.

Easy Peach Cobbler

This Easy Peach Cobble tastes good warm or cold, with or without ice-cream!

Ingredients

  • 1 cup Bisquick pancake mix
  • 1 cup soy milk
  • 3 large ripe peaches, peeled and sliced
  • 2 Tbsps. canola oil
  • 1 Tbsp. butter
  • ¼ cup sugar
  • 1 tsp cinnamon

Directions

  1. Make a batter with the pancake mix and milk and pour into a 6 cup baking dish.
  2. Melt the butter. Add oil, sliced peaches, sugar, and cinnamon, stirring gently till the sugar melts and the peaches soften.
  3. Spread the peach slices evenly over the batter and spoon the liquid over the peaches.
  4. Bake at 375 F for 40–50 minutes. Cool for at least 15 minutes before serving.

No Bake Graham Cracker Pudding Dessert

Easy No Bake Graham Cracker Pudding Dessert is a simple and so yummy!

Ingredients

  • 1 box, graham crackers
  • 2 boxes, instant vanilla pudding
  • ¼ cup dark, semi-sweet chocolate chips
  • 1 ½ cups, soy or any planted based milk
  • 2 tsps. olive oil

Directions

  1. Add ½ cup milk to the instant pudding and mix well. Add another ½ cup of milk and continue to mix. Then, if needed, add 2 tablespoons of milk at a time till the pudding reaches its desired consistency.
  2. Layer the graham crackers at the bottom of a 6 cup glass container. Add a layer of pudding. Continue to layer ending with graham crackers on the top.
  3. Melt chocolate in the microwave blasting for 30 seconds at a time till it has melted. Stir in the olive oil.
  4. Spread the melted chocolate on top of the graham crackers and refrigerate for at least ½ hour before serving. Store in the refrigerator for up to a week.

Ingredients

  • 1 15 oz can pumpkin
  • ¼ cup sugar
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 2 eggs
  • 1 graham cracker crust shell

Directions

  1. Add cinnamon, nutmeg and ginger, and eggs to the pumpkin puree and mix well.
  2. Pour into a graham cracker crust shell and bake at 425 F for 15 minutes. Cool for an hour before slicing.

Chocolate Covered Strawberries

Chocolate covered strawberries are a delectable treat!

Ingredients

  • 6 medium-large strawberries
  • ½ cup semi-sweet brown chocolate chips
  • ½ cup white chocolate chips
  • 2 tsp canola oil

Directions

  1. Wash and dry the strawberries.
  2. Microwave the chocolate chips (the white and the brown in separate bowls) for 20 seconds and stir. Repeat this until the chocolate chips have melted. (approx. 3-4 times).
  3. Stir in 1 tsp of oil in each bowl to keep the chocolate shiny and soft.
  4. Dip 3 strawberries in the brown chocolate and 3 in white chocolate and place on a parchment covered sheet pan to set. Drizzle the opposite color on top of the strawberries (brown on white and white on brown) to decorate. Let the chocolate set at room temperature.
