Easy Tzatziki Sauce is a delicious accompaniment to falafel or just use as a dip with flatbreads and veggies.
Ingredients
- 1 cucumber, grated
- 1 clove garlic, minced
- 1 tsp white vinegar
- 1 Tbsp olive oil
- 1 cup Greek yogurt
- 1/8 cup, fresh dill, chopped
- 1/4 tsp. black pepper
- 1/8 tsp salt
Directions
- Grate the cucumber and squeeze out the water.
- Mix the grated cucumber, garlic, dill, yogurt.
- Add salt, pepper, vinegar and olive oil and mix well.
- Chill for 1/2 hour before serving.
Cold Cucumber Soup
There’s nothing more satisfying than Cold Cucumber Soup on a hot Summer day!
Ingredients
- 1 cucumber, peeled and chopped
- ½ onion, roughly chopped
- 1 pod garlic, peeled
- ½ tsp Italian seasoning
- ¼ cup mint leaves (optional)
- ¼ inch jalapeno (optional)
- 1 tbsp. olive oil
- 1/8 tsp salt
- ¼ tsp back pepper
- ¼ cup water
- ¼ cup soy milk
Directions
- Sauté the onion in a little oil until soft. Add the garlic, cucumbers ( reserve a few pieces for garnish), Italian seasoning, salt and pepper and sauté till the cucumbers are soft.
- Transfer the vegetables to a blender. Add the mint, jalapeno and water. Blend till smooth.
- Stir in the soy milk and refrigerate for at least half hour before serving. Serve chilled garnished with a few pieces of cucumber.

Ingredients
- 1 English cucumber
- 2-3 plum tomatoes
- 1/2 onion
- 6-7 Kalamata olives
- 1/3 cup feta cheese, crumbled (optional)
- 3 Tbsps olive oil
- 1 Tbsp red wine vinegar
- 1/2 tsp oregano
- 1/2 tsp black pepper
Directions
- Cube the cucumbers and tomatoes and mix them.
- Cut the onion to fine slices and scatter them on the cucumber and tomatoes. Add the kalamata olives to the salad as well.
- Make a vinaigrette dressing by mixing the olive oil, red wine vinegar, oregano and black pepper. Toss the salad with the dressing.
- Sprinkle some feta on the top (optional). Skip the cheese for a vegan version.

Ingredients
- ½ gallon water, filtered
- ½ cucumber, sliced thin
- 1/2 lemon, sliced thin
- 1/3 cup mint leaves, chopped
Directions
- Add the cucumber, lemon and mint to the water.
- Refrigetate for an hour before drinking. Keep refrigerated and discard after 2 days.
Bahn Mi
Bahn Mi is a Vietnamese sandwich on a baguette that is a great for summer picnics.
Ingredients
- 1/3 cup baby carrots, julienned
- 1/3 cup cucumber, julienned
- 1 package tofu, sliced and grilled
- 1/3 cup cilantro
- 1 baguette, sliced and toasted
- 1 Tbsp mayonnaise
- 1 tsp hot sauce
- 1/3 cup white vinegar
- 1/4 cup water
- 2 Tbsps salt
Directions
- Heat the vinegar, water and salt for about a minute till the salt dissolves to make pickle juice. Cool.
- Place the carrots and cucumber in a mason jar and pour the pickle juice over them. Let is sit for about 1/2 hour.
- Slice the baguette in half and toast it. Cut into 6 inch pieces.
- Mix the mayonnaise and hot sauce. Spread this on the toasted baguette slices.
- Place the grilled tofu on a slice of baguette. Add some pickled carrots, cucumber and cilantro. Top with another baguette slice.

Ingredients
- 6 slices multigrain bread
- 1 box onion and chives cream cheese
- 1 box strawberry cream cheese
- 1 radish, sliced thin
- ¼ cucumber, sliced thin
- 1 plum tomato, sliced thin
- 2 strawberries, sliced thin
- ¼ cup blueberries
- 1 egg, hard boiled, diced
- 1 tsp mayonnaise
Directions
Spread three slices of bread with the onion and chives cream cheese, two slices with the strawberry cream cheese and one with mayonnaise. Trim the crusts and cut each slice in two, lenghtwise.
- Radish sandwich : Place the radish between two slices with the onion and chives cream cheese.
- Cucumber sandwich : Place the cucumber between two slices with the onion and chives cream cheese.
- Tomato sandwich : Place the tomatoes between two slices with the onion and chives cream cheese.
- Egg salad sandwich: Mix with egg with a teaspoon of mayonnaise and sprinkle with some salt and pepper. Place this between the two slices with the mayonnaise.
- Strawberry sandwich : Place the strawberries between two slices with the strawberry cream cheese.
- Blueberry sandwich : Place the blueberries between two slices with the strawberry cream cheese.
Cucumber Sushi

Ingredients
- ½ English cucumber
- ¼ cup rice, cooked
- ¼ cup red/orange and green peppers, julienned, oven-roasted
- ¼ cup carrots, julienned, oven- roasted
- FOR DIPPING SUACES
- 2 Tbsps soy sauce
- 2 Tbsps mayonnaise
- ¼ tsp hot sauce/siracha
Directions
- Core the cucumber in the middle to remove the seeds and create a hollow.
- Place a small amount of rice in the cucumber and press it to one side.
- Fill it with peppers and carrots.
- Slice to ½ inch rounds.
- Mix mayo and hot sauce/siracha to make a dipping sauce. Also serve soy sauce for dipping.
