Smash Avocado and Chickpea Salad (Sandwich)

Nothing is more versatile and healthier than a Smash Avocado Chickpea Salad (Sandwich)! You can also use it as a dip.

Ingredients

  • 1 can chick peas, drained and rinsed
  • 2 avocados
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 Tbsp. lemon juice


Directions

  1. Cut the avocados, scoop out the insides and cut into small cubes. Add the chick peas and smash with a fork.
  2. Add the Italian seasoning, salt, pepper and lemon juice and mix well.
  3. Place between crusty bread to make a sandwich( with toppings of your choice like tomatoes, lettuce). You can eat it as a salad without the bread or use it as a dip.

Greek Vegan Chickpea Soup

Gluten-free and Vegan Greek Chickpea soup is hearty comforting on a rainy Spring day!

Ingredients

  • 2 cans chickpeas, drained and washed
  • ¼ cup onions, minced
  • 1 clove garlic, minced
  • ½ cup carrots, diced
  • ½ cup celery, diced
  • 1 Tbsp oregano, roughly chopped
  • 1 Tbsp rosemary, roughly chopped
  • 1/8 tsp salt
  • ¼ tsp black pepper, fresh ground
  • 3 cups water.
  • 2 Tbsps. olive oil
  • 1 lemon, juiced

Directions

  1. Add some oil to a soup pot and sauté the onions till they are translucent.
  2. Add the garlic, celery, carrots, chickpeas (mush some to thicken the soup) and 3 cups water.
  3. Add the oregano, rosemary, salt and black pepper and let it come to a boil. Then simmer for 10 minutes till the vegetables are cooked. Add more water if the soup is too thick.
  4. Mix in lemon juice, drizzle some olive oil on top and serve hot with crusty/sour dough bread.

3-Ingredient Cajun Chickpeas

Ingredients

3-Ingredient Cajun Chickpeas are great as a snack or topping salads and soups!

  • 1 can chickpeas, drained, washed, dried
  • ½ tsp Cajun seasoning
  • 1 Tbsp olive oil

Directions

  1. Drain, wash and dry the chickpeas.
  2. Add ¼ tsp. cajun seasoning, oil and chickpeas to a bowl. Toss to coat evenly.
  3. Place in a single layer on a baking sheet and bake at 350F for about 45 minutes till crisp, shaking the pan every 10 minutes. Sprinkle with ¼ tsp of cajun seasoning. Store in an airtight container for up to 2 weeks.

Kung Pao Chick Peas

Kung Pao Chick Peas blend Asian flavors and go well on their own or served over rice!

Ingredients

  • 1 16 oz. can chick peas, washed and drained
  • ½ cup red bell pepper, diced
  • ½ cup celery, diced
  • ¼ onions, diced
  • 1 Tbsp. ginger, grated
  • 1 Tbsp. garlic, grated
  • ½ cup roasted peanuts (optional)
  • 1 tsp crushed red pepper
  • 1 tsp olive oil
  • ½ cup vegetable broth/water
  • FOR THE SAUCE:
    • 2 Tbsps. soy sauce/tamari
    • 1 Tbsp. Balsamic vinegar
    • 1/4 cup maple syrup
    • 1 tsp olive/sesame oil
    • 2 tsps. corn starch

Directions

  1. Sauté the onions, ginger, and garlic for about a minute until the onions are soft. Add red bell peppers, celery, red pepper flakes, chick peas and vegetable broth/water and cook for about 3 minutes.
  2. Whisk all the ingredients for the sauce till there are no lumps and pour it over the vegetable mixture. Heat till the sauce thickens and mix well.
  3. Top with roasted peanuts (optional). Serve by itself or over rice.

Falafel Burger

Make this mouth-watering, vegan, and gluten-free burger with this Falafel Burger recipe. Tastes awesome with or without a bun!

Ingredients

  • 2 cans chick peas, washed, drained
  • 1 clove garlic, minced
  • ½ onion, chopped
  • ½ inch slice ginger, minced (optional)
  • 1 tsp serrano peppers, chopped
  • 1 tsp cumin powder
  • 1/3 cup chick pea flour
  • 1/3 cup canola oil

Directions

  1. Add the garlic, ginger, onions, chick peas to a food processor and pulse into a rough mixture. Empty into a mixing bowl.
  2. Mix in cumin powder, chick pea flour and divide into six portions.
  3. Make them into patties and place on a parchment lined pan. Refrigerate the burgers for at least ½ hour.
  4. Add a little oil to a griddle and cook the burgers for about 8 minutes, turning over every two minutes.
  5. Assemble with spinach, grape tomatoes, cucumbers, tahini and hot sauce. Enjoy it with or without a bun!

Simple Low-Calorie Hummus

Simple low-calorie hummus without tahini makes a great dip for veggies, chips or pita!

Ingredients
  • 1 can chick peas, drained and rinsed
  • 2 Tbsps oilve oil
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • 3/4 tsp ground cumin
  • 2-4 Tbsps water
Directions
  1. Add all ingredients to a blender and process till smooth. If needed, add additional water to thin out the hummus. Serve with a sprinkle of paparika and drizzle of olive oil.
