Smash Avocado and Chickpea Salad (Sandwich)

Nothing is more versatile and healthier than a Smash Avocado Chickpea Salad (Sandwich)! You can also use it as a dip.

Ingredients

  • 1 can chick peas, drained and rinsed
  • 2 avocados
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 Tbsp. lemon juice


Directions

  1. Cut the avocados, scoop out the insides and cut into small cubes. Add the chick peas and smash with a fork.
  2. Add the Italian seasoning, salt, pepper and lemon juice and mix well.
  3. Place between crusty bread to make a sandwich( with toppings of your choice like tomatoes, lettuce). You can eat it as a salad without the bread or use it as a dip.

Tofu Tacos with Salsa Verde

It’s all about simple and delicious! You can make Tofu Tocos with Salsa Verde for a quick weeknight meal.

Ingredients

  • 1 block, tofu
  • 1 cup shredded lettuce
  • 1 roma tomato, seeded, diced
  • Few cilantro leaves (optional)
  • 2 flour totillas
  • 1 avacado, sliced
  • 1 tsps. salsa verde
  • 1 pinch Salt and black pepper
  • 1/8 tsp Cajun seasoning
  • 1 tsp olive oil

Directions

  1. Drain and pat the tofu dry. Slice, sprinkle with salt and black pepper. Drizzle with olive oil and broil for 15 minutes to brown.
  2. To assemble:
    • Fire roast or toast your tortillas in a toaster.
    • Dice the tofu slices and place it on the tortillas. Sprinkle with Cajun seasoning.
    • Spoon salsa verde over the tofu.
    • Top with some shredded lettuce, diced tomatoes and cilantro (optional).
    • Serve with sliced avocados on the side.

Vegan Avocado Mayo

Vegan Avocado Mayo is a healthy option to traditional mayonnaise.

Ingredients

  • 1 avocado
  • 1 clove garlic, minced
  • 2 tsps. apple cider vinegar
  • 2 tsps. olive oil
  • 1 tsp Dijon/yellow mustard

Directions

  1. Cut the avocado in half and scoop out the flesh into a blender.
  2. Add the garlic, olive oil, mustard, apple cider vinegar and blend.
  3. Refrigerate in a tightly sealed container and use within 2-3 days.

Easy Guacamole

Easy Guacamole can be made ahead of time and used as a spread or dip. It is both healthy and delicious!

Ingredients

  • 2 medium avocados, pitted, diced
  • 1 plum tomato, diced
  • ¼ cup onions, diced
  • 1 tsp jalapenos, seeded, chopped
  • ¼ cup lemon juice
  • 1 Tbsp. pickle juice
  • 1/8 tsp salt
  • ½ tsp black pepper

Directions

  1. Cut the avocados in half, remove the pits (do not discard). Scoop out the insides and dice. Place the cut avocados and pits into a bowl.
  2. Remove the seeds from the tomatoes, dice and add to the avocados.
  3. Dice about ½ an onion, pout the pickle juice over it and let it sit for 10 minutes. Add it to the avocado mixture.
  4. Finally add salt, pepper and lemon juice and mix well.
  5. Refrigerate in an air tight container till it is served. Take the pits out just before serving.

Cowboy Caviar

Cowboy Caviar aka Texas Caviar is a versatile dish that can be eaten as a dip, topping or as a salad!

Ingredients

  • ½ cup black beans, washed and drained
  • ½ cup pinto beans, washed and drained
  • ½ cup frozen sweet corn
  • 3 plum tomatoes, seeded and finely diced
  • ½ cup onions, finely diced
  • 1 Tbsp. jalapeno, seeded and diced
  • ½ cup green/red bell pepper, finely diced
  • ½ cup cilantro, chopped (optional)
  • 3 Tbsps. olive oil
  • 2 Tbsps. red wine vinegar
  • ½ tsp pepper
  • 1/8 tsp salt

Directions

  1. Microwave the corn for about 4 minutes and cool.
  2. Mix the black beans, pinto beans, corn, tomatoes, onions, jalapenos, re/green peppers.
  3. Whisk the olive oil, red wine vinegar, salt and pepper to make the dressing.
  4. Mix the vegetables with the dressing and top with cilantro (optional) and diced avocado (optional).

Avocado Salsa

Avocado salsa with oranges and corn served on grilled tofu and tortillas are such a treat!

Ingredients

  • 1 large avocado
  • ½ cup frozen corn, thawed
  • 1 orange
  • ¼ jalapeno, seeded, diced
  • 1 tsp lime juice
  • ½ cup cilantro, chopped

Directions

  1. Peel the orange and cut along the membranes to remove the segments. Slice the segments.
  2. Slice the avocado in half, scoop out the insides and chop.
  3. Mix the oranges, avocado, jalapeno, corn and lime juice.
  4. Sprinkle with cilantro and serve on top of grilled tofu and grilled tortillas for an amazing taste!

Ingredients

  • 1 English cucumber
  • ½ avocado, scooped out, mashed
  • ½ cup green onions, minced
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2 tsp lime juice
  • ½ tsp black pepper
  • 1/8 tsp salt

Directions

  1. Cut the cucumber into ½ inch round and scoop out the middle without going all the way through.
  2. Add the scooped out cucumber, avocado, onion powder, garlic powder, pepper, salt and mash well. Add lime juice, green onions and mix well.
