Roasted Broccoli Raisin Salad makes a delicious and healthy addition to any meal!

Ingredients

1 cup broccoli florets

1/3 cup raisins

1/3 cup pecans, roughly chopped

¼ cup mayonnaise

1 Tbsp vinegar

1 tsp sugar

Directions

  1. Place the broccoli florets on a sheet pan, drizzle with olive oil, sprinkle with salt and pepper and broil for 15 minutes. Cool.
  2. Mix mayonnaise, vinegar and sugar a to make the dressing.
  3. Mis the broccoli and dressing. Add raisins and pecans. Serve cold.

Ingredients

  • ½ cup broccoli florets
  • 5-6 pitted black olives, sliced
  • ½ cup tomato sauce
  • ½ cup shredded, low-fat, skim milk mozzarella cheese
  • 1 Tbsp olive oil
  • 1 clove garlic, cut in half
  • 2 naans

Directions

  1. Brush olive oil on the naans and rub them with cut garlic.
  2. Spread tomato sauce on top and sprinkle with cheese to cover the surface. Top with broccoli and olives.
  3. Bake at 350F for 10-15 minutes till the cheese melts. Serve hot.

Roasted Broccoli and Barley Salad

Roasted Broccoli and Barley Salad is wholesome, delicious and full of flavor!

Ingredients

  • 1 cup barley, cooked
  • 1 cup broccoli florets, roasted, diced
  • ½ cup onions, thinly sliced
  • 1 plum tomato, seeded, diced
  • 1 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • ¼ cup Italian dressing

Directions

  1. Cook barley per package directions.
  2. Drizzle the broccoli florets with a little olive oil and broil for 10 minutes. Dice into small pieces.
  3. Slice the onions thinly. Add a table spoon of lemon juice and let it sit for 10 minutes.
  4. Mix the barley, diced broccoli, diced tomatoes and onions. Toss with Italian dressing.

Crispy Broccoli Bites are a delicious, gluten-free, dairy-free, low-calorie dish that even your kids will love!

Ingredients

  • 1 head of broccoli, broken into florets
  • 1 cup chick pea flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin powder (optional)
  • ½ tsp black pepper
  • 1/8 tsp salt
  • 1 Tbsp canola oil
  • 1 cup water

Directions

  1. Wash the broccoli, dry and break into florets.
  2. Mix the chick pea flour, garlic powder, onion powder, cumin( optional), black pepper and salt well in a bowl.
  3. Add ½ cup of water and mix to make a pancake like batter. Add additional water if the batter is too thick. Then add the broccoli florets and toss to coat.
  4. Place the florets well apart on a greased baking pan and bake at 400F for 10 minutes. Serve hot with ranch or buffalo dip.

Ingredients

  • FOR THE BECHAMEL:
    • 2 Tbsps olive oil
    • 2 Tbsps all purpose flour
    • 1 ¼ cup soy milk
    • 1/8 tsp nutmeg
    • 1/8 tsp salt
    • ¼ pepper, freshly ground
  • 2 cups cooked pasta (like spaghetti)
  • 1 cup broccoli florets
  • ¼ cup black olives, sliced
  • ¼ cup grape tomatoes, sliced
  • 1/8 tsp salt
  • ½ tsp black pepper

Directions

  1. Heat the olive oil for about 10 seconds.
  2. Add the all purpose flour and whisk vigorously until it forms a roux and continue cooking for about 1-2 minutes.
  3. Take off the flame, add a little soy milk and stir to get a smooth paste. Then add the rest of the milk and whisk until smooth. Return to heat for about 3-5 minutes, stirring with a wooden spoon until the sauce thickens. Add nutmeg, salt and pepper.
  4. Saute the broccoli, in a little oil until it cooks for about 3 minutes and add olives, tomatoes, salt and black pepper.
  5. Add the cooked pasta and sauce and mix well.

  • 2 cups broccoli, finely chopped
  • ¼ cup onion, minced
  • 3/4 cup pancake mix

Directions

  1. Mix broccoli, onions, egg, pancake mix, salt, pepper, oregano, canola oil, parmesan and 1/4 cup mozzarella. Add water gradually to form a thick dough (like cookie dough).
  2. Pour dough into a greased pie dish or rectangular baking dish. Top with the remaining mozzarella and sprinkle paprika on top.
  3. Bake at 350 F for 30 minutes. Brown for 3-5 minutes under the broiler.
